Torque table Tuning

Hello All, 

Is there any method to tune the coyote/predator engines torque tables on the street ? Access to a dyno is a bit tough at the moment and I am having troubles finishing up the torque tables. 

I have created a histogram which copies the torque tables and the engine instang torque as the Z data..  however I am having a hard time managine a maths filter to clean out the unnecessary data. 

Any help or guides are welcome. 

My current tune is on a 2020 GT500 with full boltons and a ported supercharger + a kong 108 TB.
